Even “real potato” chips come with baggage: uniform, oversized tubers bred for size and shape rather than nutrition, deep frying, and a long list of synthetic flavorings and preservatives. So what do you do when you’re craving something crunchy and salty?
Enter lavash — the thin, soft Armenian flatbread popular across the Caucasus and Central Asia. In just a couple of minutes, you can turn it into chips with any flavor you like: cheese, paprika, sour cream and onion, or fresh herbs. And you can hand these to your kids without a second thought.

Lavash Chips: Quick, Crunchy, and Guilt-Free

Ingredients:
- Thin Armenian lavash — 2 sheets
- Olive oil — 1 tablespoon
- Salt, paprika, garlic powder, or grated cheese — to taste
Directions:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Cut or tear the lavash sheets into small squares or triangles.
- Arrange the pieces on the baking sheet in a single layer.
- Drizzle lightly with olive oil (or brush gently) so the seasoning sticks, then sprinkle with salt, cheese, and your favorite spices.
- Bake for 5 to 7 minutes, watching closely, until golden brown and crispy.
