Ingredients:

For the pudding:

  • 6–7 oz (175–200 g) pitted dates (preferably soft Medjool or regular)
  • 1 cup (240 ml) boiling water
  • 1 tsp baking soda
  • 5–6 tbsp (75–80 g) unsalted butter, room temperature
  • 3/4–7/8 cup (150–175 g) brown sugar (light or dark)
  • 2–3 medium eggs
  • 1 1/3–1 2/3 cups (175–200 g) all-purpose flour (or self-rising; if using all-purpose, add baking powder)
  • 1 tsp baking powder (if needed)
  • 1 tsp vanilla extract (optional)

For the toffee sauce:

  • 7 tbsp (100 g) butter
  • 1/2–3/4 cup (100–150 g) brown sugar
  • 3/4–1 cup (200–250 ml) heavy cream

How to Cook:

  1. One of the most popular — and irresistibly delicious — British desserts of recent decades. It’s incredibly moist, rich, and caramel-sweet, with deep date flavor and an indulgent sauce.
  2. Finely chop the dates, pour over boiling water, add baking soda, stir, and let sit for 15–20 minutes.
  3. Preheat oven to 350°F (180°C). Grease an 8–9 inch (20–23 cm) baking pan.
  4. Cream butter and sugar until light and fluffy (2–3 minutes).
  5. Add eggs one at a time, then vanilla.
  6. Stir in flour (and baking powder if needed).
  7. Mash or blend the dates into a puree (with some liquid), then fold into the batter.
  8. Pour into pan and bake 30–40 minutes, until a toothpick comes out clean.

For the sauce:

  1. Melt butter and sugar in a saucepan, add cream, bring to a boil, then simmer 3–4 minutes.
  2. Poke the hot pudding all over with a toothpick and pour half the hot sauce over it (serve the rest on the side).

Serve warm with vanilla ice cream, whipped cream, or custard.

Ingredients:

  • 8–10 slices white bread (slightly stale works best)
  • 3–5 tbsp (50–80 g) butter (plus extra for greasing)
  • 1/2–2/3 cup (80–100 g) raisins or sultanas
  • 2 cups (500 ml) milk
  • 2/3–3/4 cup (150–200 ml) cream (or substitute with richer milk)
  • 3 eggs
  • 1/3–1/2 cup (70–100 g) sugar
  • 1 tsp vanilla extract
  • Pinch of cinnamon or nutmeg (optional)

How to Cook:

The ultimate cozy, homemade British dessert. A brilliant way to use up leftover bread — simple, creamy, and comforting with a crisp golden top.

  1. Preheat oven to 340–350°F (170–180°C). Grease a 1.5–2 quart (1.5–2 L) baking dish.
  2. Butter one side of each slice, then cut into triangles or squares.
  3. Layer in dish: bread (butter side up) → raisins → repeat.
  4. Whisk eggs, sugar, vanilla, and spices. Add milk and cream.
  5. Pour mixture over bread until mostly covered. Gently press down.
  6. Let soak for 15–30 minutes.
  7. Sprinkle sugar on top for a crisp crust (optional).
  8. Bake 35–45 minutes until golden on top and soft (not runny) inside.

Apple Crumble

Ingredients:

  • For the filling:
  • 5–7 large tart apples (like Granny Smith or similar)
  • 1/4–1/3 cup (50–80 g) sugar
  • 1 tsp cinnamon (optional)
  • 1 tbsp flour (to thicken juices)
  • Juice of 1/2 lemon (optional)

For the crumble topping:

  • 1 1/4–1 1/2 cups (150–180 g) flour
  • 7–8 tbsp (100–120 g) cold butter
  • 1/3–1/2 cup (80–100 g) sugar (preferably demerara or brown for crunch)

How to Cook:

The quickest and most frequently made “pudding” in British homes. The combination of tart apples and a buttery, crunchy topping is simply perfect.

  1. Preheat oven to 350–375°F (180–190°C).
  2. Peel and slice apples. Mix with sugar, cinnamon, flour, and lemon juice.
  3. Transfer to an 8–10 inch (20–25 cm) baking dish.

Make the crumble:

  1. Combine flour and sugar, add cold butter cubes, and rub with your fingers until crumbly (don’t overwork it).
  2. Sprinkle evenly over apples in a thick layer (don’t press down).
  3. Bake 35–45 minutes until golden brown and bubbling, with soft apples underneath.
